On the Mac you can change the font. On iOS not, but I think that’s got to do with the idea of quickly jotting notes down on the go. Or they might add it in an upcoming version. What bothers me are the yellow links.

Sure, you press cmd-t and the font selector is opened.

Thank you. But, that's not really what I want. I want to change for all notes. And this dialogue box only works with selected text.

That’s how it works in all Apple apps. I think the only exception is Apple Mail, the only App made by Apple that allows setting the font by default.

I want this too! Instead, depending on what I want to write, I’ve created a few “templates” using the Shortcuts app on iOS. I have a “blank” page I copy on macOS that has the settings I already want. These aren’t solutions that would replace an elegant default font selector tho.
