Veggie “gumbo” from Sean Brock’s cookbook. It’s mirepoix, roux, any greens you have left over, soy sauce to finish it off. It’s soupy stewy warm and filling. I’m sure some sausage would fit in nicely
Always been a big soup fan but relying on it as my go-to format has significantly reduced active cooking time and waste.
Every other week or so I have lentil soup or goulash. One batch, 5 lunches sorted!
