Looks awesome! How do you keep the older ones fresh for the pop-up?

I’ve been baking a batch of bagels 🥯 every 2 days for the last week to get ready for a pop-up in 11 days. Here’s today’s batch fresh out of the oven.

I don’t— practice batches get handed off to my neighbors after I slice into one or two to test it. Next week, I’ll make a few dozen more before doing a final large batch the night before the popup.
