I'm in the same boat, but what are seeking to practice exactly? Is it information architecture? Exploring different styles? Designing innovative ideas?
find problems, solve them design doesn't have to be about pixels. you will probably learn more by explicitly staying away from pixels.

Although I think this is a fantastic way to practice, it's not that simple to find problems, to do it every day (probably take a week), and when you find them, it might not be solved through a digital product. How would you address these problems?
