Ive done similar by making a basic Figma prototype, screen recording it, and then placing the screen into a phone mockup in after effects. You can then convert the mp4 into a gif!

The key for resolution here is to screen record the prototype on your computer (not phone)

Try scaling the prototype as large as possible before recording!

Would they be screen recorded, or some emulation. The question is still the crisp recording and touch movements/UI etc. Feels like Rive or something else?

Try check out lottiefiles.com, this should give you an idea of how the animations are created. They have lots of tools and tutorial videos as well.
